One of my goals is to make dinner if not every night at least 4 nights a week. Both Jason and I make it a priority for us to eat together as a family. Our kids enjoy going around the table asking each other how our day was. Even if Jason gets home late, like tonight we try very hard to wait. Luckily the neighbors and their kids were out so growling stomachs were forgotten :)
ok, so before I went to the store, I went on line and found 4 recipes and made my lists.
Tonight I made Beef enchiladas...ummmmm yummy!!
My biggest critic is my husband, of course the kids but they are picky anyways. If Jason wants seconds, I know it was good! PRAISE PINTEREST
So, here is the recipe and pictures. ENJOY if you make them!
you can make this with chicken, which is what I really wanted to do and it calls for different ingredients. The store was out of Rotersseri chicken so I'll make it next time. This time I made Beef instead.
Ingredients:
Lean Ground Beef
Rotel Tomatoes
Taco Seasoning
Butter
Shredded Mexican Cheese
Old El Paso Enchillada Red Sauce
That's it pretty simple!
Cook your meat and when it's done add a Tablespoon of butter and Rotel Tomatoes (drained) and taco seasoning. Don't forget to add 1/2 cup of water due to the taco seasoning and mix...
Next, line your pan with non stick spray, and place some sauce in the bottom of the pan. Stuff your tortillas with meat and roll. Place the tortilla edges down.
Cover with Foil and bake at 350 for 30 minutes. After 30 minutes remove foil and continue baking for 20 minutes and ENJOY!!!!!!!
